Memorial Day is a few days away, which means it’s summer time! Now, my appetite in the summer is non-existent. It’s so hot sometimes I don’t feel like eating anything but ice cream and eating ice cream every day is not healthy, even if the ice cream is vegan. So in the summer time I turn to smoothies. My summer smoothie is filled with nutrient dense foods that will help you power through summer’s long days, and this recipe can keep you full until your next meal.
- Almond Milk 1 cup
- Ginger 2 g
- Kale 20 g or 5 leaves
- Canned Pineapple ½ cup
- Golden Flax Seed ½ cup
- Banana 1 whole
- Ice 1 cup
Golden Flaxseed is considered a superfood because it is high in fiber and omega-3. Flaxseed and Chia seeds are my favorites to use in smoothies because they are also a good source of protein. They go undetected with our taste buds, while also providing nutrients like Iron.
I used fresh Kale from my garden, but any kind of Kale will work. I love ginger in smoothies because I think it adds a stronger flavor. Sometimes with smoothies, all of the fruits and veggies are not balanced, and ginger helps tie everything together. I use a Nutribullet when making smoothies, but a blender will work fine too.
- Use a spoon or paring knife and remove the skin from the ginger.
- Add all the ingredients into the bullet/blender. (I put the milk in first so none of the flaxseeds stick)
- Pulse for 5-10 mins. You want your smoothie to be free of clumps. The shorter you mix it the thicker the smoothie will be.
- Serve or put in the fridge to stay cold. I usually make my smoothie first thing in the morning, then get ready for the day and drink it.
It’s a pretty easy recipe, and is great as an in-between meal because it’s light and refreshing during the summer heat! Enjoy!
